I'm wondering what should happen when the path delay is no longer
updated, for example when the master was restarted with the other
delay mechanism. Should the clock be still synchronized or should it
enter the UNCALIBRATED state? Would it make sense if there was a
timeout for the receipt of the Delay_Resp/Pdelay_resp messages?

I've tried to find the answer in the spec, but it seems to be left up
to the implementation. The section 11.4.4 just says it should keep
retransmitting the requests.

I think it is okay if the slave servo state just stays where it
was. After all, the delay is not supposed to change over time.
